Cornbread Recipe

This is a great recipe for cornbread that I found on
The Freash Loaf. No white sugar, just a little honey.

Old Fashioned Cornbread

2 T coconut oil

2 tsp baking powder

1 tsp soda

1 tsp salt

1 egg

2 c whole grain stone ground Corn Meal

2 T honey

1 3/4 c yogurt

Put shortening in cast iron skillet in 400F oven. Mix cornmeal, baking powder soda, salt together. Mix yogurt, honey and egg together in separate bowl with hand mixer until completely smooth. Add to dry ingredients and mix with spatula by hand with a few, quick strokes until ingredients are moistened. Take pan out of oven and swish around to coat surface. Pour batter into pan (will sizzle) and smooth top. Bake 400F until done, about 25-30 minutes.

I also like to add jalapeno peppers and cheddar/parmesan cheese before cooking.
